Tastes of Mexico – The Vegetarian Enchilada and Chiles Rellenos Fiesta

The purpose of Mucho Taco is give people a taste of authentic Mexican street food. The Mexican and all vegetarian recipes are fun and easy to make at home with the ingredients readily available in local shops and stores.

If you love Mexican food, you have probably come across “The Enchilada or Chiles Rellenos”

Enchiladas originated in Mexico, where the practice of rolling tortillas around other food dates back at least to Mayan times.   In their original form as Mexican street food, enchiladas were simply corn tortillas dipped in chili sauce and eaten without fillings.  Chiles Rellenos is a dish of Mexican cuisine that originated in the city of Puebla center of Mexico. It consists of stuffed, roasted peppers topped with a scrumptious tomato sauce.

There are now many varieties of both dishes, which are distinguished primarily by their sauces, fillings and, in one instance, by their form.

As heavy dishes we are used to eat enchiladas and chiles rellenos for lunchtime or dinner in Mexico.

You can actually filled them both with what you have in the fridge and even leftovers. They are very easy to make giving you the chance to be creative. This is one of the reasons why Mexican food is veggie friendly.

The idea of Mucho Taco was born in Beijing by Daniela Nolazco who has been living in China for the last 5 years. She became vegetarian 6 years ago in Mexico after a personal health issue made her decide she needed a healthier and better diet. More recently she became a vegan but still wanted to eat delicious Mexican food. Her search for Mexican styled dishes lead her to discover new and exciting ways of cooking and preparing everyday food for her busy working lifestyle.

Due to Daniela’s vegan diet, most of the recipes of Mucho Taco are plant based but many of them can be altered easily to incorporate your own personal favorite ingredients.

Daniela’s main goal is to eat healthier dishes without reducing the authentic rich flavours Mexican food is famous for. She would love to share her ideas and recipes with you so that you and your family can benefit from healthy and great tasting Mexican food!
