Filippo hails from a small town on top of a hill in the Tuscan countryside of Italy, where time stands still – a throwback to a bygone era. Time-honored culinary traditions and the careful selection of the best ingredients is what shaped Filippo’s cooking style. Growing up with a wood-fired stone oven, baking has always been a special part of his family weekly routine. When he had to leave Tuscany to move to London, Toront, Pisa and Beijing, he learned to adapt, and find the right ingredients and to use modern electric and gas ovens to recapture the flavors of his childhood. Filippo looks forward to sharing the secrets of of traditional artisan baking and homestyle Italian cooking so that you can achieve the best results with the tools available in your kitchen.
In this three-hour workshop, Filippo will explain all the necessary steps to make an authentic artisan loaf of Tuscan bread. The secret lies mostly in the yeast. You will learn how to cultivate yeast, each of you preparing with Filippo a small homemade batch. You will work with your own dough and learn how to work the dough and shape the bread until the dough will be ready for the final rise inside your take-home proofing basket.
