This dinner is the culinary culmination of two Jews from different backgrounds: Katharine is a Russian-American Jew who grew up on herrings and schmaltz. Yves roots are in Morocco and was weaned on the beef shank and chickpea stew deemed dafina, the most famous Jewish Moroccan dish.
